How to make a Lemon cake with strawberry filling and cream cheese frosting ?

 

 

 

 

 

Ingredients:

For lemon cake – make two sandwich

  • 1 1/2 cup of self raising flour
  • 2 tsp baking powder
  • 1/2 cup of caster sugar
  • 3/4 cup milk
  • 5 tbsp sunflower oil or any vegetable oil of choice
  • The juice and finely grated rind of one lemon

For strawberry filling/ sauce

  • Strawberries – 1 pint
  • Butter – 1 tsp

For cream cheese frosting

  • 1 tub of cream cheese (mascarpone or ricotta cheese)
  • 1 1/2 cup of whipping cream
  • 1/2 cup of sugar
  • 1 tsp of vanilla essence or 1 tbsp of lemon juice

 

Procedure:

For  Lemon Cake :

  • Preheat the oven 180C
  • In a mixing bowl, sift the flour, baking powder and sugar.
  • In a measuring jug, measure and mix the milk, oil, juice and grated rind.
  • Combine the two mixtures and beat with a spoon for 2 minutes.
  • Spoon the cake batter into the buttered and flour cake sandwich tins and bake for 20- 25 mins.
  • Check if the centre of the cake is dry. If it is not, leave in the oven for another 5 mins.
  • Remove from the oven and allow to cool for 10 mins. Turn out onto a wire cooling rack. Let it cool completely before filling and icing.

For strawberry filling/ sauce

  • Clean and chop the strawberries.
  • Place a small sauce pan on medium heat and melt the butter and then add the chopped strawberries.
  • Cook the strawberries for 15 mins or until they are a mushy.
    • Note:- If you think that the strawberries are sour, add a 1/4 cup of sugar to the mixture and let the sauce comes to a boil.

For Cream cheese Frosting

  • In a mixing bowl beat the whipping cream until stiff peaks form and keep aside.
  • In another bowl, mix the cream cheese (mascarpone or ricotta cheese), sugar and vanilla essence or lemon juice. Beat until smooth, then fold in the whipped cream and mix well and bring the mixture back to stiff peaks .

Assembling the cake

  • Once the Cake is cooled, sandwich the two cakes with the strawberry sauce.
  • Now, spread 1/3rd of cream cheese frosting thoroughly and smooth around the cake.
  • Keep the coated cake in the fridge and let it cool for an hour.
  • Once the cake is cooled, we can decorate the cake with simple twirls and strawberries and again cool the cake for half hour

Serve the cake to Perumal and then Enjoy His prasadam.
