Ingredients:

  • 2 Large Aubergines
  • 3-4 Medium sized Courgettes
  • 1 yellow Bell Pepper
  • 1 red bell pepper
  • 4 medium sized tomatoes

  • 1 tbsp mixed herbs
  • 1 tbsp olive oil
  • 1 tsp asafoetida
  • 1/2 tsp black pepper
  • 1 1/2 tsp salt

Stuffed Bitter Gourd

How to prepare Stuffed Bitter Gourd ?

An interesting recipe which will make people love this vegetable also known as Karela. It helps in reducing cholesterol and diabetes.

 

 

Ingredients:

  • 8 medium sized Karela / Bitter Gourd
  • 3/4 tsp salt

For stuffing

  • 1 1/2 cups Besan/ Chickpea flour
  • 4 1/2 tbsp Coriander and cumin powder
  • 2 1/2 tsp salt
  • 3 tbsp sugar
  • 1 1/2 tsp turmeric
  • 1 1/2 tsp lemon juice
  • 3 tbsp oil
  • 100 ml water approximately

For tempering / tadka

  • 2 tbsp ghee
  • 1 1/2 tsp mustard
  • 1 tbsp grated ginger
  • 1-2 chopped green chillies
  • 1 1/2 tsp asafoetida
  • 1/2 turmeric

Procedure:

  • Wash and dry karelas with a tea towel.

Flapjacks

Ingredients:

  • 1 1/2 blocks butter (375g)
  • 8 cups Scottish porridge oats
  • 2 tsp vanilla essence
  • 1/2 cup broken or whole hazel nuts
  • 1/2 cups raisins
  • 1 3/4 cup sugar
  • 1 1/2 cup golden syrup

Procedure:

  • Grease a large baking tray and cover with a thin layer of semolina to prevent sticking or cover the surface of the baking tray with grease proof paper.

Ingredients:

  • 8 cups plain yogurt
  • 3-4 tbsp milk (50 ml)
  • 1/4 tsp spanish saffron
  • 1/2 tsp ground cardamon
  • 1 1/4 cup caster/ icing/ powdered sugar
  • 2 soft mangoes
  • 10 pistachio nuts

Procedure:

  • Measure out plain yogurt and pour it into a doubly folded cheese cloth\ muslin cloth lining a colander and balance it over a bowl to collect the water.

  • 16 tomatoes medium sized

      For stuffing

  • 3/4 cup rice
  • 1 1/2 cup water
  • 1 small chopped red bell pepper
  • hand full cashew nuts
  • 1/2 cup frozen peas
  • 1 1/2 tbsp ghee
  • 1 tsp salt
  • 1/2 tsp turmeric
  • 1/4 tsp black pepper powder
  • 1 tsp mixed Italian herbs

Procedure:

  • Boil water in a kettle and keep aside.

  • 1 1/2 cups medium semolina
  • 2 tbsp chickpea flour (besan)
  • 1/4 cup oil
  • 2 finely chopped green chillies
  • 1 tbsp grated ginger
  • 1 1/4 tsp salt
  • 1/2 tsp turmeric
  • 1 tsp sugar
  • 1 1/2 cups yogurt
  • 2 tbsp lemon juice
  • 1-2 tbsp water
  • 2 tsp ENO (Fruit salt)

      Tempering / Tadaka

  • 1 tbsp ghee
  • 1 tsp mustard seeds
  • 2 tbsp sesame seeds
  • 1 tsp paprika powder
  • 2 tsp desiccated coconut powder
  • 1/4 bunch chopped coriander leaves

Procedure:

  • Prepare a steamer/pressure cooker with water about an inch from the bottom boil it on medium high heat.
