Ingredients:
- Potatoes- 2 medium sized
- carrots – 1 medium sized (yielding 1/2 cup of chopped cubes )
- cauliflower- 1/2 cup of florets
- green peas- 1/2 cup
- butter – 1+2+2 tbsp
- cumin seeds – 1/2 tsp
- salt to taste
- bell peppers – 1/2 cup finely chopped
- tomatoes – 2 medium sized(finely chopped)
- pav bhaji masala (without onion, garlic) – 1 1/2 tbsp
- red chilli powder – 1 tsp
- asafoetida – a pinch
- water as required
- fresh coriander leaves – 1 tbsp (finely chopped)
- pav/ bread rolls/ baps – 8 to 10
- lemon juice of half a lemon
Procedure:
- Wash all the vegetables, chop them roughly and pressure cook them for 15 min or for 3 whistles.
- Once cooked let the cooker cool and then mash them with the help of a potato masher and set the vegetables aside.
- In a wok, add 1 tbsp of butter and heat it on medium high.
- To the hot butter add cumin seeds, asafoetida and chilli powder and fry them for a minute.
- To the above add finely chopped capsicum/ bell peppers and saute them until soft.
- Now add the finely chopped tomatoes and the pav bhaji masala.
- Mix well and roast them.
- Once the tomatoes are roasted, add the mashed vegetables and mix well. If necessary add water to bring the right consistency.
- Add salt and 2 tbsp of butter and cover and simmer for 5 minutes.
- In the meanwhile, on a hot tava/ pan, toast the baps/ pav with the rest of the butter.
- Garnish the Bhaji with fresh coriander
- Serve with toasted pav to Lord Krishna and enjoy His prasadam.
